This beautiful aromatic roasted chicken is baked with grapes, sage and white wine. This dish is incredibly simple to prepare, and the resulting flavors are truly wonderful. The meat is incredibly tender and moist, with a sticky sweet syrupy grape sauce. Lovely spooned over your favorite vegetable mash. This dish comes together quickly making it an excellent weeknight choice, but it’s also fancy enough to impress company.

8-10 free range chicken drumsticks
a large bunch of grapes, rinsed
a bulb of garlic, each clove smashed
1 wine glass of white wine (I used pinot gris)
a good drizzle of extra virgin olive oil
a large handful of fresh sage
sea salt
pepper

Preheat the Oven to 180°C.

In a large baking dish, arrange the chicken, grapes and garlic. Pour over the white wine, and drizzle with the olive oil. Sprinkle with a large pinch of salt and pepper, then scatter the sage on top.

Bake in the oven for around 60 mins, or until lovely and golden. Baste the chicken half way through cooking. To test if the chicken is cooked, insert a fork or skewer in to the thickest part of the meat, the juice should run clear.
