Date and Cashew Slice drizzled with home-made Dark ‘Chocolate’ Sauce.

This delicious soft baked cashew slice is naturally sweetened with dates and topped with home made dark ‘chocolate’ sauce, making it free of refined sugar, gluten, dairy and wheat. Perfect for lunch boxes, or for that in between meal snack. Enjoy!

for the slice:
1 cup pitted medjool dates
1 cup raw cashews
1 cup shredded or desiccated coconut
5 tbsp nut butter (I like cashew or almond)
1/4 cup nut milk, or milk of your choice
1 tsp apple cider vinegar
1 tsp baking soda

for the chocolate topping:
3 tbsp extra virgin coconut oil
2 tbsp honey
2 tbsp cocoa or cacao powder
1 tsp vanilla

Preheat the oven to 160°C, and grease or line a baking tray.

In a food processor, add the dates and cashews. Pulse a couple of times, until roughly chopped. Add the remaining ingredients and pulse until well combined. Transfer the mixture in to the baking dish, then press down evenly.

Bake in the oven until lovely and golden on top, around 18-20 minutes. Remove from the oven and leave to cool completely, you can place it in the fridge or freezer to speed up this process.

To make the chocolate sauce, melt together the coconut oil and honey over very low heat. Add the cocoa and vanilla, and whisk until smooth. Remove from the heat and leave to cool slightly. The sauce with thicken a little.

Drizzle the sauce using a tablespoon over the slice. Place in the fridge or freezer to set.

Makes 9 large or 12 smaller slices.
