Ginger, lemon and thyme tonic

This morning our toddler woke up feeling unwell, the first signs of a flu were brewing. Not long after, his older sister started sneezing and complaining of a runny nose. This tonic was the first remedy that came to mind. Infused with lemon, ginger, thyme and honey, this warm, sweet beverage is perfectly soothing and a great remedy to keep any cold/flu at bay.

Ginger is a miracle ingredient. It acts as an antioxidant, eliminates toxins, has powerful enzymes for digestion and purifies the blood. Next time you are feeling a little under the weather, or even just a little tired and run down. Try this rejuvenating tonic.

1 lemon, sliced in to rounds
2 thumb size pieces of ginger, sliced
a handful of fresh thyme
2 tbsp honey

In a large tea pot, add the lemon, ginger, thyme and honey. Fill the pot with boiling water, then stir a little. Leave to steep for at least 5 minutes.

I leave mine to cool completely, then the kids and I drink it throughout the day.

Makes around 4 serves depending on tea pot size.
