Honey and garlic carrots with an orange glaze

These sticky sweet carrots are coated in an orange glaze then tossed with fresh parsley and crunchy pumpkin seeds. This is one of those classic dishes that will never go out of style. Perfect as a light lunch, or a side dish to impress your guests. And what’s even better is it comes together in less than twenty minutes.

6-8 carrots, sliced in to rounds
1 onion, diced
1 tbsp butter (or olive oil to become dairy free)
1 garlic clove, grated or finely sliced
juice of one orange
1 tbsp honey
a handful of fresh thyme, roughly chopped
a handful of fresh parsley, roughly chopped
a handful of pumpkin seeds
sea salt
ground pepper

In a saucepan of salted boiling water, simmer the carrots until al-dente. Drain and put aside.

In a skillet over medium heat, melt the butter until sizzling. Add the onions and thyme, then sauté until translucent. Add the carrots and continue to cook, whilst stirring until lightly browned. Season with salt and pepper.

Add the freshly squeezed orange juice, garlic, honey and parsley. Still until nicely coated.

Remove from the heat and sprinkle with pumpkin seeds.

Serves 2 as a light dish or 4 as a side.
